Aubergine is our favourite summer dish. Preparation is quick and easy. And the result is a delicious, light and healthy dinner
1. Wash the eggplants, cut them in half lengthwise, remove the flesh, add salt and let them sit for about 10 minutes. Drain the water. Cut the tomatoes into eighths, slice the mozzarella into rounds and season with salt. 2. Fry the onion in oil until golden brown, add 3 eggs, salt and make a roast. 3. Place the slices of mozzarella in the prepared eggplant halves on the bottom and season with cheese seasoning, then layer the scrambled eggs, tomatoes and sliced cheese on top and season again with cheese seasoning. 4. When ready, place the cheese on a baking tray and pour a little oil and 2-3 tbsp of water on the bottom of the tray. Put in the oven for about 20 minutes. 5. And we can serve. Load onto plates, season with ketchup and garnish with fresh mint leaves. Serve with wholemeal bread. Enjoy!
