Bacon muffins

Bacon muffins make a creamy soup or can be eaten with a spoon.or can be served as such as an appetizer with a mayonnaise-based batter.
Ingredients for about 6 pieces
6 slices of bacon 2 eggs 1 dl of cream 3 dl of wheat flour salt and sugar
Thicken the bacon and place in a cold pan. Start raising the heat and fry the bacon until crispy. Put the pieces in a blender and grind to a fairly fine crumb. Säästä the fat in the pan.
Beat the eggs and cream until frothy, season with salt and sugar. Whisk in the flour, a little at a time, until the muffin batter becomes fluffy. Finally, stir the bacon powder into the batter.
Place the bacon fat in the muffin tins and fold the batter into the bottom half of the baking pan.
Bake the bacon muffins in a 150C oven for about 20-30 minutes. Test with a wooden spoon; if the dough doesn’t stick, the muffins are cooked.
TIP: The muffins can be made well in advance and placed on a baking pan for serving (it’s a good idea to cut the pastry flat). This will give the muffins a nice crispy surface.
