Bacon and onion in Italian tomato sauce recipe

This is a dish that is hearty and filling, but still light and healthy. It’s a perfect mid week meal that the whole family will love. You can also freeze any leftovers for another time.
Ingredients:
-1 tbsp olive oil
-1 onion, diced
-4 rashers of bacon, diced
-2 cloves of garlic, minced
-1 tin of diced tomatoes
-1/2 tsp sugar
-1/4 tsp chili flakes
-salt and pepper
Instructions:
1. In a large pan, heat the oil over a medium heat.
2. Add the onion and bacon and cook until the onion is softened and the bacon is crispy.
3. Add the garlic and cook for 1 minute.
4. Add the tomatoes, sugar, chili flakes, salt and pepper. Bring to a simmer and cook for 10 minutes.
5. Serve with some crusty bread or over some cooked pasta.
This dish is so versatile – you can really use any kind of pasta or even some rice. And if you want to make it vegetarian, simply leave out the bacon. Here are some more tips:
-Add some spinach or kale at step 4 for extra veggies.
-For a bit of creaminess, stir in some ricotta at the end.
-Swap out the diced tomatoes for a tomato passata or even some roasted tomatoes.
– experiment with different herbs – oregano, basil or thyme would all be nice.
– If you like things spicy, add some more chili flakes or even some sliced chili peppers
