Babka’s cheesecake buns

500 g plain flour (extra special) 50 g granulated sugar 50 g melted butter 250 ml whole milk 1 cube of fresh yeast 2 pcs egg yolks 1 pcs lumpy cottage cheese 100 g powdered sugar pinch of salt

I got this recipe from my grandmother who used to make it every month.It’s memories of time spent at my grandparents’ house on weekends and holidays.

Heat the milk, add a little sugar and grind the yeast. Wait for the yeast to make leaven.

Place the flour in a bowl, add the sourdough starter, melted butter, sugar, egg yolks,milk and salt. Work the dough and let it rise in a warm place for about 30 minutes.

Turn the dough out onto a floured surface and roll out. Cut into squares with a rolling pin and spoon in the cheesecake filling, join the buns together. Place on a baking tray and brush with oil.

Bake for about 30-35 minutes at 180 degrees. After baking, sprinkle with icing sugar.
