Awajuki Ichigo

White slices with strawberries. Recipe from Japan.

Ingredients:

Rule for 4 servings: 100 g strawberry (can use and other fruits) 80 g of powdered sugar 20 g of gelatin 3 pcs whites 350 ml water

Procedure:

1. Place the gelatine in 350 ml of cold water and let it swell for about 15 minutes, then heat it to 70-80°C in a water bath and let it cool to room temperature
2. Beat the egg whites into stiff snow, add the icing sugar by spoonfuls and beat briefly, then stir the cooled gelatine into the snow
3. Wash the strawberries and cut them into halves or quarters depending on their size
4. Pour the snow and gelatine into the mould and let it set a little, then divide the cut strawberries on it and wait until they are partially submerged
5. Place the mould in the fridge and leave to set overnight
6. Remove the jelly from the mould, cut into wider slices and garnish with more fresh strawberry pieces when serving.
