Austrian sourdough dumplings (steamed buns)

500 g coarse flour 250 ml milk 20 g yeast 1 tsp sugar pinches salt plum jam butter, powdered sugar 250 ml white wine 70 g sugar
procedure

Prepare the necessary ingredients

From half of the lukewarm milk, yeast and sugar, make a sourdough starter. Add the beaten egg in the remaining milk to the flour and salt, add the sourdough.

Prepare the dough, let it rise for about 40 minutes.

Rise.

On a board, divide into 4 loaves, fill with jam.

Close and let rise again. Steam in a steamer for 10 minutes.

Mix the ingredients together.

In a water bath, heat them, whisking constantly (do not boil) until the foam thickens.

Serve the dumplings covered with butter, topped with shodo and sprinkled with sugar.
