Australian Lamb Chop

Recipe from the Australian episode of “Prostřeno” for lamb stew, which Australians consume in large quantities.

Ingredients:

800 g of lamb 400 g of canned artichoke hearts 800 ml chicken stock 400 ml white wine /td> 6 pcs garlic cloves 2 pcs chilli peppers 2 pcs onions 2 pcs bean leaves 1 pc whole cinnamon 1 pc thyme sprigs 2 tbsp tomato puree (paste) 1 tbsp oil 2 tsp Roman cumin 1 tsp freshly ground pepper lemon zest from 1 lemon salt

Procedure:

1. In a large pot, fry the lamb cubes in hot oil until nicely browned
2. Add the peeled onion cut into half rounds, crushed garlic, bay leaves, sprig of thyme, whole cinnamon, cumin, peppercorns and de-peeled, chopped chillies, cook for about 5 minutes, stirring constantly
3. At this stage, add the lemon zest, tomato paste and wine, simmer for a while, then add the stock and drained artichokes, bring the mixture to the boil again
4. Place the pot in an oven preheated to 160 °C and let it simmer for 2 hours, stirring occasionally.
