Ingredients:
1 pound elbow macaroni
1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon cayenne pepper
3 cups milk
8 ounces sharp cheddar cheese, shredded (2 cups)
1/4 cup grated Parmesan cheese
12 buttery crackers, such as Ritz, crushed (about 1 cup)
Instructions:
1. Preheat oven to 375 degrees F (190 degrees C). Butter a 3-quart baking dish.
2. Cook macaroni in a large pot of boiling water until tender, about 8 minutes. Drain and return to pot.
3. Melt butter in a saucepan over medium heat. Whisk in flour, salt, mustard, and cayenne, and cook for 1 minute. Gradually whisk in milk. Bring to a boil, whisking constantly, and cook until thickened, about 2 minutes.
4. Add cheddar and Parmesan cheeses to milk mixture, and whisk until cheese is melted. Add cheese sauce to macaroni, and stir until evenly mixed.
5. Pour mac and cheese into prepared dish. Sprinkle with cracker crumbs. Bake until bubbly and golden brown, about 30 minutes.
