Last Updated on
Fabada Asturiana is a bean stew from the province of Asturias in northern Spain. Fabada is hearty country food at its best.
Ingredients for four
200g chorizo sausage (raw) 150g morcilla (or black sausage) 3 slices of pork chop (or bacon) 2 teaspoons of cooked white beans &2 teaspoons of pre-cooked chickpeas 3 dl of stock 1 tsp of pea and corn paprika 1 teaspoon of ground pepper pepper pepper
Split the pork chop and place in a pan. Start cooking the pork and add the butter to the surface. Cut the sausages into pieces and add to the pan. When brown on the surface, pour the meat into the pan. Rinse the pan with a splash of water and pour it into the pan.
Seed the beans or chickpeas and add them to the pan. Add the peas, corn and peppers to the pot. Pour in the stock and season with paprika and pepper. Salt should be used sparingly in the fabadas, at least if you are using beans. You can add enough salt on your own.
Simmer the Fabadas for 15 minutes and serve hot with a good piece of bread.
