Asparagus with mild sauce

1 kg asparagus 4 pcs egg yolk 3 tbsp butter 1 dl beef broth 1,25 dl white wine pcs water 1 pcs lemon pcs salt
procedure
1.
Peel and boil the asparagus in salted water and drain.
2.
Heat the fat in a sauce pan in a water bath, pour in the wine, add the stock, egg yolk and lemon juice. Whisk until thickened. But the sauce must not boil, as it would curdle.
3.
Place the cooked asparagus on plates and pour the sauce over it.
