Asian Style Smoked Tongue

Platties of cooked pork tongue simmered in a spicy marinade.

Ingredients:

400 g of cooked peeled smoked pork tongue For the marinade: 1 teaspoon grated ginger 1/2 tsp chopped chilli 2 tbsp of tomato puree 2 tbsp soy sauce 2 tbsp oil 1 tablespoon honey 2 pieces garlic cloves 2 dl orange juice 1 dl sweet white wine a pinch of grated orange zest

Procedure:

1. Heat oil in a saucepan, add tomato paste, fry briefly, pour white wine with orange juice, honey and soy sauce
2. Then add peeled and sliced garlic cloves, cleaned finely chopped chilli pepper, finely grated ginger and orange peel and boil everything
3. Slice the cooked smoked tongue into thin slices and simmer in the prepared marinade for 5 minutes, then transfer the meat to a bowl, let it cool and leave it to rest for at least 2 hours.

Recommendation:

Serve with a salad of fine carrot noodles, celery stalks and leeks.
