1000 g duck pieces 4 cloves garlic 4 pcs onion in skin 20 g dried bean sticks 15 g dried lily flowers 8 pcs dried shitake mushrooms 3 pcs carrot 2 tsp cardamom 2 tsp coriander seeds 1 tsp dried ginger 1 tbsp sugar 3 tbsp fish sauce 1 liter vegetable broth 1 liter water

Into a large pressure cooker, progressively place the pieces of duck meat.

Add garlic cloves, skinned scallions, dried bean sticks and dried lily flowers (buy at Asian grocery stores).

Next add dried shitake mushrooms, sliced carrots.
4.
Add all the spices – cardamom, coriander seeds, dried ground ginger, sugar and fish sauce.
5.
Pour broth and water in equal proportions over everything.
6.
Bring to the boil and close the pressure cooker. Boil for 45 minutes.
7.
Serve with glass rice noodles and fresh cilantro.
