250 g bacon 1 tbsp oil 4 pcs potato 1 pcs onion 1 clove garlic 1 tsp whole cumin 2 tsp ground red pepper 900 ml vegetable broth 2 pcs bay leaf 3 pcs whole black pepper new 5 pcs black pepper 250 ml sweet cream 33 300 g bryndza pcs chives

Traditional Slovak soup of grandmothers. This is how we like it best.
1.
In a saucepan, fry diced bacon until you have beautiful pink cracklings. Drizzle with a little oil if needed.

Take the bacon greaves and add the diced onion to the stock.

Rest for 5 minutes and add the sliced garlic.
4.
Rest until fragrant (about 1 minute) and sprinkle with cumin.
5.
Add the diced potatoes and stir.
6.
Dust with ground red pepper and stir to coat the potatoes.
7.
Add the vegetable stock immediately (so that the potatoes are covered) to prevent the red pepper from turning bitter.
8.
In a sieve or cheesecloth, place the bay leaf in the soup along with both kinds of spices.
9.
Bring to the boil and cook, covered, for 15 minutes or until the potatoes are tender.
10.
Remove the sieve with the spices and blend the whole mixture.
11.
In an extra bowl, whisk the cream together with the bryndza until smooth.
12.
Pour the mixture into the soup and let it come to the boil.
13.
Serve with chopped fresh chives and bacon greaves.
