Apricot Honey Sink Glaze Recipe

The glaze for your chosen baked ham is an opportunity to try something new or to look back at recipes from your grandparents or cultural traditions. When you buy a ham, it often comes with a sweet glaze, but there are many other options.

This recipe allows you to use your own apricot preserves or a jar you’ve bought from a local farm or farmers market. You can also use local honey to make the glaze, rather than brown sugar or refined sugar. You can use the goodness of the fruit, lemon juice, natural honey and rose spices to bring out the sweetness and flavour of your ham.

Sweet glazes like this are best with wet cooked buns, while spotted glazes are better with salty hams. This glaze has the thickness of lemon juice and the sweetness of honey and preservatives, and can be used with both types of ham.

What you’ll need

1/2 cup fruit preserves (apricots) 1/2 cup sweet 1 tablespoon cornstarch 3 tablespoons lemon juice 1/4 teaspoon cloves (ground)

How to make

Combine all ham glaze ingredients in a sauce pan over medium heat. Heat the glaze, stirring constantly, until thickened and flaky, about 5 minutes. Keep the glaze ready for the last 30 minutes of baking the ham. Spoon the glaze over the ham and bake for the last ten minutes. Temperatures between 325 and 350 F are best so the glaze will not burn or smoke.

Sugars are available in apricot preserves, and the honey caramelizes on the surface of the ham, imparting a brown color and giving a caramel flavor that plays well with the ham’s flavor.

Additional flavouring comes from the apricot, lemon juice and cloves. When caramelized, the glaze also adds texture to the ham, so you have a beautiful green colored fabric with the ham on the dinner table.

You’ll often have a reusable ham that you’ve already cooked, so follow the instructions for cooking time before adding the glaze. You don’t want the ham to dry out for so long, as the juices provide lots of wonderful flavor. Be sure to read the label on your ham if it’s an uncooked ham that needs more attention to proper cooking time.
