Apple Tiramisu from South Tyrol

We bring you a small taste of South Tyrolean cuisine thanks to this recipe from the Roter Hahn estate.

Ingredients:

Spices (for 4 people): For the sponge base: 120 g flour 120 g of sugar 3 pcs of egg speck of salt Cream: 125 g mascarpone 125 g white yoghurt 30 g sugar 100 ml cream 2 tbsp eggnog Filling: 2 pcs of apple 200 ml apple juice 15 g sugar 2 tbsp lemon juice 1 tablespoon carrot liqueur

Procedure:

  • For the sponge base: Beat the eggs, sugar and salt until foamy and carefully start adding the flour. Bake at 180°C.
  • Cut the peeled apples into cubes and stew with apple juice until soft. Season with sugar, lemon juice and apricot liqueur.
  • Cream: Mix the mascarpone, white yogurt and sugar well. Whip the cream and stir into the cream along with the eggnog.
  • Cut circles out of the sponge base and layer in the glasses. Alternate between the biscuit rounds, apple cubes and cream.

    Note:

    The farm Gasserhof in Kuenss is located in the middle of beautiful orchards. On the farm you will find a swimming pool, table tennis and barbecue facilities. For smaller visitors there is a children’s playground. By arrangement, the farmer will prepare a picnic basket full of South Tyrolean delicacies and you can eat it on the relaxing meadow at the farm.
