Apple pie with mascarpone and salted caramel

5 pk egg 200 g granulated sugar 1,5 dl oil 300 g plain flour 1 packet baking powder 1 KL cinnamon 5 pk apple

200 g granulated sugar 5 tbsp water 1/2 KL salt 250 ml whipping cream 250 g Mascarpone

A moist, delicate and simple cake that will have the whole family drooling.

Peel and grate the apples

Beat the eggs and sugar until frothy in a large bowl.

Stir in the oil and then gently whisk in the flour that was previously combined with the baking powder and cinnamon.

Finally, lightly stir the grated apples into the batter and pour onto a baking tray lined with baking paper.

Bake in a preheated oven at 180°C for about 15 minutes or until a skewer inserted in the centre comes out clean.

Meanwhile, prepare the cream. Do not stir! Bring to the boil over medium heat and let it cook (without stirring) until the sugar turns amber in colour.

Then lower the flame and pour in half the cream (125 ml), add salt and simmer for a few more minutes.

Finally set aside and let cool down.

Add 1/2 of the caramel to the mascrapone and stir. Pour in the rest of the cream and whisk until creamy.
10.
Pile and spread the cream over the pastry.

Finally decorate with the remaining caramel and refrigerate for at least an hour before serving. Enjoy! 😉
