Apple Cookies with Vanilla Bean Recipe

These apple biscuits are filled with chopped nuts and raisins with a vanilla icing. These cookies are a great way to celebrate apple season!
These are fun cookies and kids can get in on the icing.

What you need
. 2 cups all-purpose flour (mix before measuring) 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon cloves 1/2 teaspoon nutmeg 1/2 cup shortening 1 1/4 cups brown sugar (firmly packed) 1 large egg 1 cup walnuts (or pecans, chopped) 1 cup apple (unpeeled, finely chopped) 1 cup raisins (chopped) 1/4 cup milk (or juice) For the vanilla glaze: 1 1/2 cups confectioners’ sugar 1 tablespoon oil (softened) 1/4 teaspoon vanilla extract 1 tablespoon milk salt 2 to 3 tablespoons half-and-half (or milk)
How to make it
Bake the flour with the baking milk, salt, cinnamon, cloves, and nutmeg. In a large mixing bowl, cream shortening and brown sugar; beat in egg until well blended. Stir in half of the flour and spices, then stir in walnuts, apple and raisins. Stir in milk, then remaining flour mixture. Drop rounded tablespoonfuls of dough, about 2 inches apart, onto greased baking sheets. Bake at 375° for 12 to 15 minutes or until set and lightly browned on the bottom. While cookies are still hot, spread with a drizzle of Vanilla Glaze. Makes about 3 dozen apple cakes.
Vanilla Glaze
In a small mixer with an electric mixer, blend confectioners’ sugar with softened butter, vanilla, salt and 2 to 3 tablespoons half-and-half or milk enough to get a thin spreading consistency .
