Apple-cinnamon pancakes with walnut filling

200 g plain flour 4 dl milk 2 pcs eggs 1 packet cinnamon sugar 1 pinch salt 2 pcs apple 20 dkg walnuts to taste powdered sugar 1.5 dl water 1 packet vanilla sugar a little lemon zest pinches gingerbread spice 1 tbsp raisins a little rum a little sunflower oil for squeezing

These pancakes have an apple-cinnamon batter and a walnut filling. The batter contains grated apples and 1 cinnamon sugar in addition to the usual ingredients. 1. Mix the milk, eggs, flour, salt, cinnamon sugar and grated apples and work into a dough with a whisk. In a frying pan with a little oil, fry the pancakes with the batter. 2. While they cool a little, prepare the walnut filling. Put the water, caster and vanilla sugar, ground nuts, lemon zest, gingerbread spice, soaked raisins and a little rum in a saucepan. Heat to boiling, stirring constantly, until a semi-thick filling forms. 3. Let cool a little and fill and roll the pancakes. Finally, they can be dusted with icing sugar or decorated with fruit.
