American Pumpkin Pancakes

Pumpkins belong to autumn, also to Halloween. Thanks to pumpkins, we can enjoy a lot of goodies. Probably one of the most popular recipes in the USA is fluffy pumpkin fritters served with maple, honey or other fruit syrups.

Ingredients:

4 pieces of egg 150 g smooth flour 180 ml milk 3 tbsp weekly puree 2 tsp cinnamon 1 tsp baking powder pinch of salt oil for frying fritters butter for fritters, fruit syrup

Procedure:

1. Separate the egg yolks from the whites, then add all the ingredients except the salt to the egg yolks in a bowl, whisk with a whisk until smooth
2. Melt a tablespoon or so of butter in a very hot frying pan, ladle in enough batter to make a cake about fifteen centimetres in diameter
4. Fry the fritters until brown blisters start popping out, which takes about 1 minute, then flip the batter and fry for another minute
5. Keep the finished fritters warm, serve them layered on top of each other, topped with butter cubes and drizzled liberally with syrup.
