Amaretto chicken slow cooker

You might not think of amaretto liqueur as a complementary ingredient to chicken, but the flavours of this dish will convince you. Amaretto and curry flavours complement these light slow cooked chicken breasts. Browned boneless chicken breasts cook in a slow cooker with curry powder, condensed soup and mushrooms. You can substitute boneless chicken thighs with this recipe.
Serve the chicken with hot boiled rice and tossed salad for a delicious family dinner.
What you need
4-6 chicken breasts, boneless, skinless 1/2 cup flour 1 teaspoon Madras curry powder 1 teaspoon garlic powder 1/4 teaspoon salt 1/4 teaspoon. Peppar 1 tablespoon vegetable oil 1 (10 3/4 oz) butter mushroom soup (or chicken cream) 1 (4 oz) can mushrooms (or use fresh) 1/4 cup amaretti liqueur Optional: 1 teaspoon brown sauce (e.g., Gravy Master, kitchen bouquet 2 tbsp lemon juice
How to make it
Pat chicken breasts in half on paper towels to dry. Combine flour, curry paste, garlic powder, salt and pepper in a plastic or paper bag. Add the chicken breasts and let coat. Heat the vegetable oil in a large frying pan over medium heat. When the oil is hot, arrange the chicken pieces in the pan. Fry for about 4 minutes on each side or until browned. Transfer the browned chicken breasts to a slow cooker. Combine the condensed soup, mushrooms and amaretto in a bowl. Add brown gravy, if using, and lemon juice. Spoon mixture over chicken. Cover and cook on low for 6 to 8 hours. Serve chicken and sauce with hot cooked rice.
