The person responsible for Spain knowing what a good American hamburger is for almost 40 years was Alfred Gradus, founder of Alfredo’s Barbacoa. Despite the stiff competition that has appeared in recent years, Alfredo’s Barbacoa was a pioneer in bringing authentic American burgers to Madrid.

Since they opened their doors in October 1981, Alfred and Ana Maria, his wife, have been able to boast for years of serving the best burgers in the capital along with other typical preparations of American cuisine such as coleslaw or barbecue sauce, which at Alfredo’s is completely homemade and the recipe is kept under lock and key.

To pay our particular tribute to Alfred, in Cocinillas we wanted to remember one of his mythical burgers that is also one of our favorites. It is very simple and very easy to make, because you need very few ingredients and it takes very little elaboration. The key is, as always when it comes to achieving good results in the kitchen, in the quality of the raw material, in this case, the meat you use to make the burger. Our recommendation, a good veal needle mixed with a ten percent of bacon or Iberian jowl.

. Minced beef with 10% Iberian bacon, 250 g Soy sauce, 1 tablespoon Sesame or olive oil, 1 tablespoon Salt Ground pepper Chopped fresh parsley, one tablespoon Onion, one slice Hamburger bun, 1 Philadelphia cheese, 1 ball

Step 1

Mix the minced meat with the soy sauce, sesame oil, salt, ground pepper and chopped parsley. We make a ball and flatten it slightly until it is shaped like a hamburger.

Step 2

In a non-stick frying pan or on a very hot griddle we cook our hamburger to the desired point, in the same pan we also cook the onion slice with a pinch until it is slightly toasted around the edges.

Step 3

Open the bread bun, toast it lightly, place the hamburger, top with the grilled onion slice and finish with a ball of Philadelphia cheese and the other piece of bread.

And all that’s left is to enjoy our delicious burger at home.
