Aioli – Garlic sauce

Aioli is traditionally made without eggs, but it’s also good with mayonnaise. The sauce can also be used to season potato salad.
Ingredients about 2 dl
Traditional aioli
2-10 cloves of garlic; 1.5 dl virgin olive oil salt white pepper 1 tbsp lemon juice (if desired)
Contemporary mayonnaise-based aioli
2-10 cloves of garlic 1.5 dl virgin olive oil 1 tablespoon lemon juice (if desired) 1 yolk salt white pepper just under a teaspoon of mustard (not enough)
Traditional aioli
Can be made with a hummus. Peel the garlic cloves and toss into the mortar. Season with salt and pepper. Crush the cloves and drizzle olive oil underneath in a thin layer. Pushöstä aioli into a crunchy paste.
Modern Aioli
Separate yolk into the bowl of a hand blender. Add myös mustard and lemon juice to the pan. Peel the garlic cloves into the mixture and give it a few whirls to break up the texture.
Set some olive oil in a hand blender and gently add more.You can usually do it without running. You know, you should have three cups. Season to taste.
