African sauces on the grill

Marinated mutton grilled on a spit.

Ingredients:

800 g of spleen meat 100 g of bacon 1/2 l milk 1/8 l fat 6 pcs peppercorns 1 tsp of marjoram speck of thyme bay leaf coriander spike

Procedure:

1. Defat the mutton, remove the fat, cut into slices
2. Place the slices on top of each other in a stoneware container, put the spices on them and pour vinegar and milk over them
3. Let the meat rest in the refrigerator for 2-3 hours
4. Then remove the slices of meat, dry them with a towel and skewer them on a grill needle alternating with bacon slices and grill.

Recommendation:

Serve as a spicy savoury dish with bread.
