Quick and hearty, a good lunch is like a blessing. Especially if you have a garden to dig, a baby to care for, a meal to cook, a nap to bless..you know the drill. This one really came out of the non-eaters. I mean, when I create recipes to order, sometimes I get leftover rice, bits of vegetarian “meat”. Well, this lunch was also put together on a plate from the first gifts of the garden, torn radish leaves, young arugula, oregano. That way you can mix and match the various carbohydrate-based ingredients you can afford for lunch, adding a legume, something crunchy like nuts, kernels, seeds.
