Recipe for vegan egg bites that uses silken tofu and mung beans

Tofu and mung bean egg bites are a vegan-friendly and protein-packed alternative to regular eggs. These little bites are perfect for a quick and easy breakfast or snack on the go. Simply add your desired toppings and enjoy!
To make tofu and mung bean egg bites, you will need:
1 block of silken tofu
1/2 cup of cooked mung beans
1/4 cup of all-purpose flour
1 teaspoon of baking powder
1/2 teaspoon of salt
Instructions:
Preheat oven to 350 degrees Fahrenheit.
In a food processor, combine the tofu, mung beans, flour, baking powder, and salt. Blend until the mixture is smooth.
Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, or until the egg bites are firm to the touch.
