Last Updated on
This Indian vegetarian recipe is super simple to cook in your 3 quart instant pot! All you need is some oil, spices, vegetables and rice. You can use any vegetables you like, but we suggest broccoli, peas, carrots and potatoes. Cook the rice according to package instructions. Then, add the vegetables and spices to the pot and cook on high pressure for 3 minutes. Let the pot release pressure naturally for 10 minutes, then open the valve to release any remaining pressure. Serve with naan bread or roti.
This dish is hearty and filling, but still light and healthy. It’s perfect for a winter night in or a quick and easy weeknight dinner. Plus, it’s vegetarian so everyone can enjoy it!
