Here’s what you’ll need:
1 whole chicken, cut into 8 pieces
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 onion, chopped
3 carrots, chopped
3 celery stalks, chopped
1 garlic clove, minced
1 cup chicken broth
Instructions:
Preheat oven to 375 degrees Fahrenheit.
In a large bowl, combine chicken pieces, olive oil, salt and pepper. Toss to coat.
Spread the chicken and vegetables onto a roasting pan.
Roast for 45 minutes, or until the chicken is cooked through.
Remove from the oven and let cool slightly.
In a small bowl, whisk together chicken broth, onion, carrots, celery, garlic and black pepper. Pour over the chicken.
Serve immediately, or store in the fridge for later
