Ingredients:
-1/2 lb. 99% lean ground beef
-1/2 teaspoon chili powder
-1/4 teaspoon ground cumin
-1/4 teaspoon garlic powder
-1/4 teaspoon paprika
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1 tablespoon olive oil
-1 (10-ounce) can diced tomatoes with green chilies, undrained
-1/2 cup prepared salsa
-1 cup frozen corn
-1 cup shredded reduced-fat Mexican cheese blend
-6 whole wheat tortillas (6 inch)
-Cooking spray
Instructions:
1. Preheat oven to 350°F.
2. To prepare filling, cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Drain. Add chili powder, cumin, garlic powder, paprika, salt, and black pepper; cook 1 minute, stirring constantly. Remove from heat; set aside.
3. Heat olive oil in pan over medium heat. Add tomatoes and salsa; cook 5 minutes or until slightly thickened, stirring occasionally. Stir in corn and beef mixture.
4. Spoon about 1/3 cup filling evenly down the center of each tortilla. Roll up; place seam sides down on a baking sheet coated with cooking spray. Sprinkle with cheese
