1 1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons cold butter, cut into small pieces
1/4 cup knox gelatin
3/4 cup plus 2 tablespoons cold water
For the filling, you’ll need:
4 cups chicken, cooked and shredded
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup mayo
1 tablespoon dried parsley
1 teaspoon garlic powder
salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
3. Using a pastry blender or your fingers, cut in butter until the mixture resembles coarse crumbs.
4. In a small bowl, whisk together Knox gelatin and cold water.
5. Add gelatin mixture to flour mixture and stir until the dough comes together.
6. On a lightly floured surface, roll out dough to 1/8-inch thickness.
7. Using a biscuit cutter or a glass, cut out circles of dough.
8. Press circles of dough into the bottom and up the sides of a greased muffin tin.
9. In a large bowl, whisk together chicken, cream of chicken soup, sour cream, mayo, parsley, garlic powder, salt and pepper.
10. Spoon mixture into dough-lined muffin tin.
11. Bake for 20-25 minutes or until the dough is golden brown and the filling is bubbly.
12. Let cool for 5-10 minutes before serving.
