This chocolate cheesecake is the perfect dessert of the season recipe

Cheesecake is the most famous cheese dessert in the world, with a thousand variations depending on the season and the imagination: from strawberry cheesecake to pumpkin cheesecake, including this chocolate cheesecake! This recipe is for you: with chocolate cheesecake, pleasure is guaranteed in every bite.
Ingredients:
For the base:
250 g chocolate cookies 100 g butter
For the cream:
450 g ricotta cheese 250 g cream cheese 200 g dark chocolate 120 g sugar 2 eggs 50 g cornstarch 20 g cocoa powder 1 vanilla bean
Preparation:
To make this chocolate cheesecake, first prepare the cookie base: melt the butter in a saucepan and let it cool, meanwhile pour the chocolate cookies into a blender and blend to powder. Transfer the mixed cookies to a bowl and add the melted butter.
Stir with a spoon until smooth. Pour the mixture into a 22 cm diameter mold that you have previously greased and lined with parchment paper, then pack the mixture with the back of a spoon both on the bottom and on the edges.
Let the base harden in the refrigerator for at least an hour (or in the freezer for at least 30 minutes).
Meanwhile, prepare the cream: chop the dark chocolate with a knife and melt it in a double boiler or in the microwave, then let it cool. Meanwhile, pour the ricotta and the spreadable cheese into a blender. Add the vanilla bean seeds and sugar and blend again.
In a bowl, sift the cornstarch with the cocoa, then add to the contents of the blender and blend. Add the eggs and mix again, then pour in the melted chocolate, and continue mixing until smooth.
Take the mold out of the refrigerator and pour the cream into it, then level the surface.
Bake in a preheated oven at 165° for 1 hour, inserting a pan with a little water into the oven to create humidity: this way, it is less likely that cracks will form during baking.
Once baked, remove the cheesecake from the oven and let it cool in the pan, then transfer it to the refrigerator for at least 2 hours before serving.
