Mojo sauce

Soy sauce is the most popular side dish from the Canary Islands, usually served as an accompaniment to crispy potatoes. It is a very good addition to my barbecue. Mojo can be made in a red or green version.
Ingredients, about 1,5dl
1 red pepper 1 red chili 1 clove of garlic 2 tbsp olive oil 1 tbsp; 1 tbsp white wine vinegar 1 tsp salt 1 tsp cheese cumin 2 tsp paprika powder 1 small piece of toast (if you want more texture) Tip: For a green mojo sauce, swap out the paprika and substitute; 1 bunch of cilantro + 1 bunch of parsley. Wash the peppers. Remove the stem and seeds. Put in a chopper and pour over the olive oil. Mince finely. Add the remaining ingredients and blend until well smooth. Use a piece of light bread to add texture to the mojo sauce if desired. Add the leaven in small chunks and mix well.
