Jeerariisi

Jeer rice is made by cooking rice in a pan and seasoning it with cumin. It adds a new twist to the side dish served with Indian curries.
Ingredients for six
3 dl basmati rice; 2 tablespoons of cooking oil; 1 tablespoon of jeera seeds; 1 tablespoon of cumin seeds.1 teaspoon salt
Rinse the rice thoroughly in a sieve with cold water. Leave to dry.
Boil a litre of water to wait.
Place the food and salt in a generously sized rimmed frying pan or casserole. Fry the caraway seeds for a minute to release the flavours.
Gently scoop the rice into the pan. The water and hot oil will tend to break down the rice. Fry the rice and stir well. Add hot water to the pan a few tablespoons at a time. Keep stirring until the rice stays loose.
When the rice starts to dry out, add more water. Continue until the rice is cooked.
