Vermicelli salad

This blood orange salad is wonderfully fresh and versatile. It’s great to take with you on a picnic.
Ingredients for two
50g thin rice noodles 5 sprigs of celery 1 dl water 2 tbsp sugar 1 tbsp white wine vinegar 1 tsp salt
Tip: You can add chillies to the blood omelette salad for an extra kick.
Simmer the stock ingredients in a small saucepan with the rice noodles for a few minutes to soften them.
In the meantime, rinse and slice the celery very thinly.
Add the broth and noodles. Add the celery and mix well. Let stand for about an hour in a cool place. Pour off the excess stock (you can save it and use it in my cooking).
Serve the vermicelli salad as a light starter or as part of a larger meal.
