Mifu pasta

Mifu pasta is flavoured with pecorino, lemon and roasted tomatoes. If you don’t know what mifu is, think of it as a coarse-grained cottage cheese. They’re a modern-day staple.salt 1/2 teaspoon black pepper
Cut the tomatoes in half at the stem and place the cut side in a pan to cook. Put 1 tablespoon of olive oil in the pan so the tomato doesn’t stick.
Cook the pasta in a generous amount of salted water until crisp. Strain and add a little olive oil so that the pasta doesn’t stick.
Stir the mifu, chopped pecorino cheese and squeeze the lemon juice into the pasta. Season with black pepper.
Serve the mifu pasta in portions on plates. Serve with 2 halves of roasted tomato per serving and basil for garnish.
