Naudan sisäfileen epämääräThe thick patty doesn’t fold into steaks, but it’s excellent, juicy meat for skewers. My recipe for a barbecue sauce for meat skewers.
Ingredients for four
300g thick fillet of beef 1 onion salt and pepper 1 tablespoon of cooking oil;
Good barbecue sauce
2 plums or 1 nectarine 1 tbsp water 2 tbsp balsamic vinegar 1 tsp salt 1 tsp sugar
Peel the plums and chop them. Place the plums with the rest of the barbecue sauce ingredients in a small saucepan under a lid to simmer for 15 minutes. Stir in the water. The aim is to get a thick, fairly even syrup. Finally, blend with a hand blender until smooth.
Peel and slice the onion into four pieces.
Cut the beef into 2cm x 2cm cubes. Thread the skewers alternately with the onion and the meat. Brush the surface of the meat and season with a little salt and pepper.
On a hot grill (or under ovenproof grill racks), quickly sear the meat.
Slide the meat skewers then epädirectly onto the lämpööand start basting with the barbecue sauce. Cook and baste until the onion softens slightly. The meat should be cooked until reddish inside.
Serve the meat skewers and spoon the rest of the barbecue sauce over the meat.
