Cold smoked bean pasta

Cold smoked salmon pasta is a very quick and delicious dish. With cream, lemon and dill, you can’t go wrong.
Ingredients for six
500g of good quality dry pasta, e.g.. 150g cold smoked salmon 3 sprigs of celery (or leeks) 2 dl cream 0.5 dl good quality dried salmon stock; 1 lemon 1 bunch of dill & a teaspoon of white pepper salt
Bring the pasta to the boil in 4 litres of water. Add a handful of salt. Kyllä, you read that right – a handful. Remember that the pasta must be cooked to a crisp and not crumbly.
Smoke the celery and cut the smoked salmon. Fry the celery in olive oil for a while in a pan. Squeeze in the lemon juice and cream. Season with white pepper. Add 2 dl of pasta cooking water (season with salt and pepper). Bring the sauce to the boil and leave to stand.
When the pasta is cooked, pour off the excess water and stir in the cream sauce and the chopped cold smoked salmon. Add the chopped dill.
Serve the cold smoked salmon paste immediately, garnished with dill sprigs.
