Crab burger

A buffed burger made in the style of Sloppy Joe, with the tea running down your chest. From the messy to the messy, it’s hard to resist the gorgeous crabmeat.
Ingredients for four
400g prawns (or other crab meat) 4 briossis & brioche sauce & sour apple red onion 4 limes; 2 dl mayonnaise chilli powder to taste 1 tsp salt 2 tbsp fresh dill 4 slices of cheddar
Marinate the prawns in a colander by pouring boiling water over them.
Remove the zest of 2 limes.
Soak the prawns in a bowl and squeeze the juice of 4 limes into the mixture. Salt well and stir to combine.
Peel and dice the apple. Stir into the shrimp broth. Do the same with the onion.
Let it cook for a while, pour off the excess juices and season with lime zest, chilli and chopped dill.
Spoon the mayonnaise into the mixture. Thin the dressing with lime juice, but be careful not to make it too firm.
Place the brioche, cut side up, on a baking tray in the oven. Top with slices of cheese and place in the oven under the grill racks for a few minutes to allow the cheese to melt.
Make the crispy brioche burgers: crumble the crust on the bottom and place the lid next to it. Chop the dill for garnish and serve with lime juice on the side. Neatly eat the crispy burger with a fork and knife open, or slam the lid on and munch Sloppy Joe style.
