Nice salad

Nice salad is a classic from Välimereltä. There are countless versions, and no one can say with certainty what was “authentic” and “original”. The salad dressing made with capers in this recipe will certainly be very lähellä.
Ingredients for 4
2 large potatoes 4 eggs 2 cans of tuna in water 4 handfuls of mixed lettuce 150g of broad beans a few anchovies 2 tomatoes 1 handful of basil leaves; 1 handful of olives*
Salad dressing
1 tbsp small capers 1 tbsp lemon juice 4 tbsp good quality olive oil
*Tip: Olives can be omitted from the salad if you use capers in the salad dressing.
Cook the potatoes with their skins and the eggs until hard. Cool the potatoes and eggs in cold water. Bring the pods to a rapid boil and cook in cold water to preserve their beautiful green colour.
Roast the lettuce and dry. Drain the tuna.
Stir the salad dressing so that the capers are ground into a paste. You can do this easily with Morttel. Leave to stand.
Peel and chop the potato. Peel myös eggs and cut into halves.
Prepare the Nice salad as follows:Salad on the bottom, then potato and eggs on the edges. You can put anchovy slices on top. Followed by beans and tuna. Top with diced tomatoes and basil leaves.
Side with a wonderful salad dressing.
