Fish Steaks

Kale steaks are made from frozen fish or, if the ahti has allowed it, other solid fish. Lahna is my favourite emerging trend fish.
Ingredients for four
300 g frozen soup 2 tsp onion flour 1 tsp salt 1/2 tsp white pepper 1 dl breadcrumbs 1 tbsp milk 1 egg 1 handful of dill1 tbsp butter and 1 tbsp cooking oil for frying
Tip: It’s a good idea to make a generous amount of fish steaks at once and freeze them after frying.
Defrost the frozen egg until soft. As the fish thaws, it will release liquid, so it is a good idea to put a paper towel under the package. Grind the sei to a pulp, for example with a food processor. Mix the rest of the ingredients into the fish paste and leave to cook for 15 minutes. Shape into fish fingers with a bridge or a die-cutter. Fry the steaks in a medium frying pan in a butter and oil mixture until cooked and serve immediately with a creamy dill mash.
