Fried elderflowers served sprinkled with icing sugar and flavoured with cinnamon or honey.
Ingredients:
4 pcs
of large elderflower inflorescences, including the stem
oil for frying
For batter:
3 tbsp
smooth flour
2 tbsp
milk
2 pieces
of egg
a pinch of baking powder
cinnamon or honey
powdered sugar
pinch of salt
Procedure:
Remove any bugs and other impurities from the elderflowers to bring out the flavor of the blossoms, definitely do not soak them in water.
Whisk the egg and stir in the milk, a pinch of salt and the flour to make a thicker batter.
Dip the whole gooseberry inflorescence into the batter and fry the flowers in a pan with hot oil until golden brown, which only takes a short time, about 2-3 minutes.
Place the fried gooseberries on paper napkins and once the oil has been absorbed into the napkin, serve them immediately sprinkled with sugar and cinnamon or drizzled with honey.
