Oriental Salad

Although the term “salad” is included in the title, this recipe is actually a side dish to grilled or roasted dishes and Asian cuisine. The recipe comes from China.

Procedure:
1. First, prepare the rice; put the rice in a cast iron pot in hot oil and fry it until it starts to brown slightly, then pour hot water, add salt, cover and simmer for 18-20 minutes
2. When the rice is soft, shake the pot with a lid, uncover and let the rice steam and cool (it must be loose and the grains must separate from each other)
3. In a frying pan in heated oil, let the hot pepper brown slightly and immediately pour it on the rice, add the cucumber cut lengthwise into quarters and then into 1 cm large slices, oranges stripped of white matter and divided into pieces and onions cut finely
4. Sprinkle the mixture with vinegar, salt and finally oil
5. Stir the dish gently and let it rest for 30 – 60 minutes in the refrigerator.
