Chicken Soup (Tori Jiru)

Recipe for Japanese soup made with chicken thighs, radishes, mushrooms, carrots and white wine.

Procedure:
1. Boil the chicken thighs in water until the meat falls off the bone, collecting the grease from the broth as it boils
2. Cut the meat into small pieces, put back into the broth, bring the broth back to a boil, then reduce the heat
3. Cut the washed carrots, radishes and mushrooms into thin rounds and add them to the soup
4. Pour in the wine and salt and continue to cook until the soup is reduced by half
5. Sprinkle the finely chopped leek pieces over the individual portions and serve.
