Chapatí

Chapati is the most common Indian bread prepared from chapati flour, which is a smooth whole wheat flour called atta.

Procedure:
1. Put the flour and salt in a bowl, make a well in the flour and gradually add water, work it with your fingers to make an elastic dough which you knead for about 10 minutes
2. Cover the dough with cling film and leave to rest for 15-20 minutes
3. Place a heavy frying pan over a large flame (there is a frying pan for chapatis), when the pan starts to smoke, reduce the flame and place the first pancake in the pan
4. Once the pancake starts to blister, flip it over, press it to the bottom with a towel or wide cooker and flip it over again, keeping the finished chapatis warm, wrapped in foil lined with a paper towel
5. Repeat the process and prepare the other pancakes in the same way
6. Serve the chapatis hot.
Note:
If you do not have attu flour, it can be substituted by mixing 1:1 plain and whole wheat flour.
