Roasted liver served with pickled onions, garnished with a sprig of fresh thyme.
Ingredients:
Procedure:
1. Cut the peeled onion into rounds, sprinkle with ground black pepper and veggies
2. Place in a bowl, drizzle with olive oil and place the bowl in the refrigerator for 4 to 6 hours
3. Rinse the cleaned liver, dry it, slice it, lightly chop it, pepper it and fry it in hot oil (it should get a crust, but it must be pink inside)
4. Spread the finished liver on plates, sprinkle with salt, spread the pickled onion rings on each slice, garnish with a sprig of fresh thyme and serve with fried chips.
