Spicy Meat “Pimientos”

Pimientos or (chilli) peppers suggest that meat prepared in this way is for lovers of spicy cuisine. It is marinated chicken, turkey or rabbit meat that is slow roasted in oil and butter and then baked in the oven, topped with cherry or port and whipped cream.

1. First, prepare the marinade; de-seed and finely chop the chillies, mix them with mustard, 2/
3 sherry (port)
2. Place the meat without skin in the marinade and let marinate preferably overnight
3. In melted butter mixed with oil (1:
1), slowly sear the meat on both sides, season the seared meat with salt and pepper
4. Place the seasoned meat in a baking dish, pour the rest of the marinade, sherry and whipped cream

Serve variously prepared potatoes, rice or buckwheat as a side dish.
