Basque Chicken

Chicken breast roasted on all sides, sauteed with Vegetable Recipes and other ingredients, served with rice or bread.

Procedure:
1. Rinse the cooled or thawed chicken, pat dry, divide into portions, season with salt and pepper
2. Heat the oil in a pan, put the bacon in and once it has browned, remove it from the pan and keep warm
4. Add the meat portions to the pan in batches, turning them over carefully so that they brown nicely on both sides, remove the browned meat from the pan and keep warm
5. Now add the onion, once it turns yellow, add the paprika and garlic, simmer over low heat, stirring constantly for 10 minutes, then add the meat, bacon and sliced tomatoes, pour in the stock, season to taste and simmer until the meat is tender, then remove from the heat and sprinkle with parsley.

Supplement:Dry cooked rice or white bread.
Note:
A piece of carrot or eggplant or zucchini is often added to the mixture. A favourite spice is bay leaf. Parsley can be substituted for other herbs.
