Roast Goose Swedish Style

Recipe for roast goose as prepared in Sweden.

Procedure:
1. Rub the well, washed and dried goose with lemon juice
2. Stew the rinsed plums in a little water, remove them and remove the stones
3. Peel the apples, remove the cores, cut them into slices, mix them with the plums and stuff them into the goose
4. Sew the two ends of the goose, salt and pepper the goose, put it in a baking dish, pour a little water over it, cover it with foil, fasten the edges of the foil well to the edges of the baking dish and put it in a medium oven
5. After about 2 hours, remove the foil, drain the juices, put the goose back in the oven for 10 minutes and let the skin brown
6. Skim off the fat from the juice, thicken the juice with potato flour mixed with a little water and boil briefly.
