Procedure:
1. Grind the well-bleached meat twice on a meat grinder, mix well with salt, ground pepper and form four low patties
2. Place a thick onion ring in the centre of each patty and a raw egg yolk in it
3. Garnish the meat with diced beetroot, finely chopped capers, finely chopped onion and potato, cut into small cubes
4. When serving, mix all the ingredients well and whisk with a fork, using a spoon in your left hand to help you turn the mixture over
