Vissinada – cherry syrup

This recipe comes from Greece. It is a sweet syrup made from cherries, sugar, water and lemon juice, which is then diluted 5:1 with water and ice.

Procedure:
1. Put some of the pitted cherries in the pot, sprinkle sugar over them, then put another layer of cherries, sugar again … repeat the process until all the cherries are used up, let stand for 3 hours
2. Pour 300 ml of drinking water into the pot, bring everything to a boil, while collecting the foam that forms on the surface, stir and let it bubble on a low heat source until the syrup thickens
3. Before turning off the heat source, add the lemon juice, let it cool well
4. At this stage we have obtained the so-called vision glyco, a Greek jelly that is traditionally eaten as a dessert, can be stored in preserve jars and used as a preserve, or made into a drink
5. For a vissinada, the jelly must be diluted 5:1 with cold water and a few ice cubes added.
