Austrian Kaiserschmarren, the favourite dish of Emperor Franz Joseph. The dish has many variations, the base is pancake batter.

Procedure:
1. Crack the eggs and separate the yolks from the whites
2. Mix the milk with the egg yolks, flour and sugar, add a pinch of salt and mix with a fork to make a smooth dough
3. Let it rest for 10 minutes
4. Beat the egg whites with snow and add to the dough, the breadcrumbs will be fluffy
5. Heat the butter in a pan, pour the dough, fry until golden, turn and fry the other side
6. Arrange the pieces on the plate, pour the strawberry jam around them, drizzle with rum, season with cinnamon and icing sugar.
